What are chicken croquettes? 

Croquettes of all kinds are popular in the world, especially in Spain. Usually, about the size of half a chipolata (link) sausage, they are crisp on the outside and delightfully smooth and soft inside. it's a delicious meal for your little one.


What are croquettes made of?

Croquette (croquetas in Spanish) is the name for a type of fritter made of a soft base like roux, mashed potatoes or rice, etc. And it's mixed with an appetizing ingredient such as chicken, fish, or minced beef. 




Preparation time: 20 minutes.  Cooking time: about 8 minutes.   To serve: 4



HOMEMADE CHICKEN NUGGETS INGREDIENTS: 

1/4 cup butter 

2 tablespoons flour 

1 1/4 cups mixed milk and chicken stock (or milk only if stock is not available) 

2 cups ground cooked chicken 

Salt 

Freshly ground black pepper 

1 egg, beaten 

2 tablespoons dry bread crumbs 

Oil for frying 


Metric /Imperial:

50 g/2 oz butter

2 tablespoons flour 

300 ml/ 1/2 pint mixed milk and chicken stock (or milk only if stock is not available) 

0.5 kg/1 lb minced cooked chicken

Salt 

Freshly ground black pepper 

1 egg, beaten (Eggs less recipe)

2 tablespoons dry breadcrumbs 

Oil for frying 

How to make chicken croquettes?


  1. Melt the butter in a saucepan and stir in the flour.
  2. Gradually stir in the liquid and cook, stirring, until the sauce is thick and smooth.
  3. Stir in the minced (ground) chicken and season well.
  4. Continue cooking for about 1 minute, on low heat, until the mixture is firm enough to hold together in a mass.
  5. Remove from the heat and allow to cool slightly, then, with floured hands, form the mixture into little sausage shapes.
  6. Brush these with beaten egg and coat with breadcrumbs.
  7. Shallow fry in hot oil until golden brown. 

Serve hot or cold.

Tips and Notes:

  • You could use tuna fish, ham, minced meat or gouda cheese instead of chicken.
  • I like baked tomatoes with chopped cheese as a side dish
  • This recipe could be frozen.
