What are chicken croquettes?
Croquettes of all kinds are popular in the world, especially in Spain. Usually, about the size of half a chipolata (link) sausage, they are crisp on the outside and delightfully smooth and soft inside. it's a delicious meal for your little one.What are croquettes made of?
Croquette (croquetas in Spanish) is the name for a type of fritter made of a soft base like roux, mashed potatoes or rice, etc. And it's mixed with an appetizing ingredient such as chicken, fish, or minced beef.Preparation time: 20 minutes. Cooking time: about 8 minutes. To serve: 4
HOMEMADE CHICKEN NUGGETS INGREDIENTS:
1/4 cup butter
2 tablespoons flour
1 1/4 cups mixed milk and chicken stock (or milk only if stock is not available)
2 cups ground cooked chicken
Salt
Freshly ground black pepper
1 egg, beaten
2 tablespoons dry bread crumbs
Oil for frying

50 g/2 oz butter
2 tablespoons flour
300 ml/ 1/2 pint mixed milk and chicken stock (or milk only if stock is not available)
0.5 kg/1 lb minced cooked chicken
Salt
Freshly ground black pepper
1 egg, beaten (Eggs less recipe)
2 tablespoons dry breadcrumbs
Oil for frying
How to make chicken croquettes?
- Melt the butter in a saucepan and stir in the flour.
- Gradually stir in the liquid and cook, stirring, until the sauce is thick and smooth.
- Stir in the minced (ground) chicken and season well.
- Continue cooking for about 1 minute, on low heat, until the mixture is firm enough to hold together in a mass.
- Remove from the heat and allow to cool slightly, then, with floured hands, form the mixture into little sausage shapes.
- Brush these with beaten egg and coat with breadcrumbs.
- Shallow fry in hot oil until golden brown.
Serve hot or cold.
Tips and Notes:
- You could use tuna fish, ham, minced meat or gouda cheese instead of chicken.
- I like baked tomatoes with chopped cheese as a side dish.
- This recipe could be frozen.
What to serve with chicken croquettes?
- I usually put on the table some additional easy pasta salads to flavor the meal.
