Healthy Toddler Meal Ideas: Egg Nests


As a mum, you know that growing toddlers often get hungry especially between meals.

This simple Toddler Meal Idea is simple, healthy and easy to assemble. You can use this meal to introduce your toddlers to 
new foods and help picky eaters to enjoy their meals.

Here is a kid-friendly meal that your picky eater might actually try:

Easy Toddler Meal Ideas: Egg Nests 

This is a Spanish way of using up leftover mashed potatoes. 

Preparation time: 30 minutes
Cooking time: 8 to 10 minutes
To serve: 4 


EGG NESTS: INGREDIENTS:

Metric/Imperial
0.5 kg/1 lb mashed potatoes
2 tablespoons milk
25 g/1 oz butter
½ teaspoon salt
2 spring onions or shallots, finely chopped or 2 tablespoons chopped fresh chives
4 eggs, separated
Olive oil (or vegetable oil) for frying

2 cups mashed potatoes
2 tablespoons milk
2 tablespoons butter
½ teaspoon salt
2 scallions or shallots, finely chopped, or 2 tablespoons chopped fresh chives
4 eggs, separated
Olive oil (or vegetable oil) for frying


EGG NESTS PREPARATION: 

1. If the potatoes are cold, warm the milk and melt the butter in it. (If the potatoes are still warm, this will not be necessary.) Mix thoroughly with the potatoes. 

2. Add the salt and finely chopped onions (scallions), shallots or chives and mix thoroughly into the potatoes, creaming with a fork. 

3. Divide into four and form into balls. This is easier if the potato mixture is allowed to cool. Make a hollow on the top of each ball and carefully put an egg yolk into each. Whisk the whites until fairly firm. Brush each ball of potato with egg white. 

4. Heat some oil (about 2.5 cm/1 in) in a frying pan (skillet) until light haze forms above it, then carefully fry each potato nest, basting with the hot oil until golden, and the egg yolk just set. Remove on to hot plates and serve at once.

Tips and Notes:


*These egg nests are a great alternative to the usual potato and eggs.


*You could pair it with creamy chilled avocado slices for that hot and cold combination.
